A recipe for mulled wine now that the cold is here.
please note that you don't need to buy expensive and often superfluous sachets / toddies etc. This way tastes better as you are using fresh stuff.
Serves 5 glasses
1 Bottle of cheap, but chunky Aussie red
1 orange, quartered, with cloves stuck in the skin
2 cinnamon sticks
1 bay leaf (optional)
brown sugar to taste
Splash of brandy or rum (optional)
Put red wine, orange pieces, cinnamon sticks and bay leaf in a pan.
Warm, but do not boil. Keep warm for 5-10 minutes to let the flavours infuse.
When warm add brown sugar to sweetness you require.
Add a little brandy or rum if you desire for a little extra oomph.
Serve

Another Mulled Wine recipe if you have all the ingredients at hand:
1 Bottle Red Wine
2-5 Tbsp Raw Sugar (depending on personal taste)
2 Cinnamon Sticks
1/2 tsp Ground Nutmeg
1 Bay Leaf
5 Cloves
1 Orange juiced & chopped
1 Star Anise
You dont need to use an expensive bottle of wine for this recipe, choose a mid-range, fruity or spicy red wine such as a Shiraz or Merlot.
Add Quarter of the red wine, sugar, cinnamon stick, bay leaf, cloves, nutmeg, star anise, orange juice & rind to a saucepan, bring to boil and stir until the sugar has dissolved and the mixture thickens. This allows the full flavours to be drawn from the spices and orange peel. Stir in the rest of the wine, simmer on a low heat for 15 minutes until steaming hot. (Do not let it boil)

Hi there,
I am here with a good recipe for one cup of German Mulled Wine (Glühwein):
Put 1 cup red wine in small pan and place over medium heat
Add 1 Teaspoon of the spice mix (they sell the spice mix on ebay, see link below)
Bring the heat up. It should not boil so as when bubbles start rising turn the heat off and let sit for about 5 minutes
Remove seasonings and serve hot in glass over a slice of lemon
The spices are already in the bag. All you need is some red wine. You can use an inexpensive full bodied fruity wine.
Thanks and regards,
Abisha Lopez
