Hiya FoodLovers,
Now I am on a roll when I have time to make things like scones (savoury and sweet), muffins, scotch eggs etc for lunches. These things I am trying to make at the weekends and/or after work during the week and freeze.
Can I make bacon and egg pie? My recipe has tomatoes and cream cheese in it sometimes; can this one be frozen or can other versions of bacon and egg pie be frozen successfully.
Also any other lunch type ideas on what I can prepare ahead of time to freeze and defrost; keep in mind there is no microwave for the reheating after the defrosting process; nor is there an oven...
Have a FAB weekend.
Warmest regards,
-Kathie-

Hiya Jojo,
Here goes; I hope it makes sense:
BACON AND EGG PIE
Ernest Adams Savoury pastry OR Savoury for the bottom and flakey on the top
5 eggs, beaten
250 g (ish) bacon pieces
Parsley, chopped
Onion, chopped
Spring onion, chopped
Cream cheese
Garlic salt & pepper
¼ tsp mustard powder
½ tsp green herb stock powder
½ tsp onion powder
Sliced tomato
Sliced or grated cheese
Peas and corn
I kinda use most of what is listed above, but you can vary quantities and ingredients. I beat the eggs and the stocks, herbs and cream cheese together and then stir in the bacon and cheese or lay the cheese on top with the tomato.
I normally put the savoury pastry on the bottom of my tin, which by luck is 200 x 150 mm, which tends to fit the pastry sheets al donte and then either a savoury sheet on top or a flakey sheet. I tend to like the savoury sheet on top as it is less crumby.
I also brush the top with milk and scatter with sesame seeds.
I bake the pie at about 190 degrees for 30-40 mins; this depends on how many other ingredients I use and how thick the pie is.
Good luck...
