Paula, my personal preference, from years of preserving, is the red fleshed plums. I was recently given a large amount of the old fashioned "red right through" plums as we called them, they were from a friend's tree that was years old and they made up into wonderful sauce and jam.
I think the red fleshed ones are more flavoursome than the yellow fleshed ones, but that is only an opinion.
May I suggest that you make up small batches of whatever you are going to do, to start with. Plums freeze extremely well, you can then take them out as you discover what ones you like the best. I just cut the plums in half and remove the stones.

The red through plums make nice jam and sauces,and chutneys and have the darker colour to the end product.
The lighter coloured plums make jam and it varys from the red plums, milder but still very nice, they all have their own flavour.
The light plums that I like as jam and bottled are Luisa they are a late-ish plum and rather large, also lovely eating.
