I saw some once several years ago on a roadside stall in the Bay of Plenty (so long ago I can't remember exactly where). I see no reason that they wouldn't grow in NZ and it would be great to have a local source.
I fell in love with pomelos when we were in Hong Kong and had them with breakfast, also in Bangkok. I would absolutely love to have a ready supply as they are also wonderful in salads.

I enjoyed pomelo juice while I was in Italy three years ago. It was on the hotel breakfast bar as one of the juices and was a lovely shade of pink and mildly sweet. After trying it, I asked what it was and they said it was grapefruit juice. So of course I had to look up pink grapefruit juice and discovered it was pomelo.
Our Countdown had some in stock a few weeks ago, from the US, so I bought one. For the size of it, it was very light and there was very little that was edible. Separating the pith from the actual fruit was a real pain. I wanted to try the actual flesh before juicing it, but it didn't seem worth juicing just the second half after eating the first. There wouldn't have been much juice from just a half.

Yes they are surprisingly light for their size. I found the process of removing the pith and then the membrane from the segments very pleasing! I have photos which I put on FB but am clueless about putting them on here. They yield a large amount of flesh - enough to be used in a couple of meals for the two of us here. One of the most pleasing a wild rice salad with avocado, pomelo, spring onions and roasted almonds. Thank you Dawn, TPANDAV and Lorna for joining this thread. I hope we'll track a grower down.
Ottolenghi writes about them beautifully. When he was a child he and his siblings would sit around the table as his mother prepared a Pomelo, each in turn enjoying a delicious segment or two.

I have never tried pomelo so but they certainly sound worth searching out.
Coincidentally, today I have been looking at bread making supplies and have found a New Zealand site that also sells fruit trees, Pomelo trees being listed among them.
Search on Trade Me under, Giant Fruiting Pomelo Citrus Tree.
They give information on areas suitable to grow them too.
Hope this helps.
