Hi,
Does anyone have a nice recipe for a Red Velvet Cake with Raspberry flavour. i have some freezedried raspberry powder to use in the cake.
I need to make a couple of layers of an approx 23 cm cake for a very important person on their birthday.
Also need recipe for icing that can be piped easily and keeps it's shape.
Lots of ideas on the internet, but I'd love a recommendation as to a tried and true recipe.
Any advice would be appreciated.
Thanks.
Jenny.

My go to frosting is Italian Meringue buttercream, once you understand what it is you are doing it is easy to make and very easy to pipe, tastes light and delicious and holds well. You do need a candy thermometer and a stand mixer though. The important thing is to not add the spread until the meringue is properly cold, or the mix will curdle as the warm meringue mix melts the spread, but if that happens you can just pop the whole lot in the fridge and then rebeat it when it's colder and it comes together.
I've actually never made or been a fan of red velvet cake, it just seems like a lot of colouring is added to a basic chocolate cake mix to me. Lately I've been making Nadia Lim's chocolate, beetroot and orange cake. It's a very easy cake to make, and is gluten and dairy free...I jazz it up with an orange syrup (you could use raspberry) brushed onto the layers, a ganache (coconut cream and dairy free chocolate) filling between layers, and Italian meringue buttercream made with a spread called Nuttelex, and everyone has raved! I think you could use your raspberry powder instead of the orange zest in the cake. Actually just clicked on the recipe and remembered that she does it with a raspberry frosting but don't think hers is able to be piped.

So I follow your tips to get the required equipment, and got the Harbor Candy Thermometer (hoping this is the most accurate one after spending hours of reading guides/ articles).I added a little twist to it and the cake turned out amazing. Here is the picture:
