I don't know what instant corn masa is, but I have this lovely recipe for cheesy cornbread from Food in a Minute. It's good as a loaf but even better as muffins. The recipe seems to suit the smaller size of muffins and there's no bread to slice! I make these in bulk over winter and freeze them. They're good with soup instead of bread or toast .

I've never heard of corn masa mix before but the recipes on their website look really yummy I do have normal corn flour but there was no ingredients list on their site to check whats in the mix. I found the nutrition table of some flours on an american website but no ingredients. Is it just corn flour with a fancy name?

No, regular cornflour and masa are very different, the former is almost pure starch and cannot be used to make breads etc whereas masa has been treated (with lime i think) to make an equivelant to wheat flour. Masa is very important in Mexican baking where it is the base for many breads but also tacos, nachos and tortilla.

It's not just the starch, there is real flour out there! And they call it flour too -maybe to confuse people?!
I use potato flour (yellowish powder or flakes) in wholemeal breads to make them less crumbly, I think starch would have the opposite effect and my corn flour/maize flour is like wheat flour just yellow (or orange). Both don't make those sqeeeeeky starch sound.
So if the 'mix' does not contain any flavours, spices or rising agents I will give the cookie recipe a try

What we call cornflour, or wheaten cornflour, the very fine, very white stuff used as a thickening agent and in making sponges and other light cakes is different to the finely ground cornmeal that I buy which is maize rather than wheat. It is yellow and I use it for all sorts of things. I'm guessing the instant stuff referred to is the finely ground cornmeal with flavourings and seasonings. If you have a pantry well stocked with herbs and spices, the instant stuff would be unnecessary. And for those who are gluten-free, cornmeal is ideal for many your bread requirements without a lot of fuss.

Masa Harina is ground corn treated with limewater (you're right virgil)and is the number one ingredient for corn tortillas and it's used as part of the filling in tamales. You can make cornbread with masa harina. YOu will find it in the international sections of supermarkets.
It will give you a much heavier bread than one made with fine ground cornmeal (not cornflour).
There is a recipe for cornbread made with masa harina here [www.shizzling.com]
and one that we make regularly here on my blog, that is made with cornmeal (healtheries brand fine ground) [sundayhotpants.nocturne.net.nz]
I'm lucky enough to have a mother in law who was born in mexico and is an amazing mexican cook - she's just an email away if you need info on mexican foods

Wow thankyou Lisa, I love your site, interesting reading and fabulous photos, what kind of camera do you have? I have printed off your recipe and will endeavour to give it a whirl in the next week or so. I have a million mexican cooking questions; we love mexican food and where possible I try to do it the authentic way.
