coconut oil vs Butter? August 28, 2016 11:21AM |

Can I use butter instead of coconut oil in a recipe...especially a baking recipe? I find coconut oil way to greasy.
also can anyone tell me if coconut oil is any healthier for you than butter when it comes to cholesterol and artery health?
I was told once that if a fat eg. butter and coconut oil, is firm at room temperature then it can line/clog your arteries unlike Olive oil which is still liquid at room temp and healthier for us.
I remember using coconut oil to help us tan many years ago ( before we knew about sun safety!) It melted on our skins but was hard and white in the jar if it was kept inside.

Coconut oil starts to harden at below 24 degrees, our bodies general temperature is around 37 degrees.
I havent tried baking with it, but it would melt in the oven I think. I think it would be better to use in no bake recipes.
As for the cholesterol debate.......you do need to do your own research and read both sides of the argument. I personally now consume saturated fat (but not coconut oil as I dont like it) and have removed all seed oils from my diet and am not concerned about cholesterol, but I can say, I know personally of a couple of people that have done the same and changes were marginal alhough they did not have 'bad' numbers to start with, it did not have a negative effect.

This is my approach too, although I do eat coconut oil and coconut cream as well as other saturated fats. Saturated fats have been wrongly demonised for decades but in fact they are much more stable than unsaturated fats and therefore less prone to rancidity. The hypothesis that cholesterol is dangerous has been shown to be untrue, in fact almost all types of cholesterol are protective substances.
The idea that "hard" fats clog up arteries like mud in a drainpipe is simply not true. Fat metabolism is far more complicated than that.
You need to do your own research as it is a complex topic.

Now the very common perception about the comparison between coconut oil & butter is that coconut oil makes for a healthier choice. But read an interesting take on this, as per which coconut oil can be more harmful than butter and some other fats. As per a recent study, coconut oil raises LDL levels higher than butter.
