I dried figs just once in my dehydrator and found that no matter how long I left them, they didn't dry completely. They remained fairly leathery, just like the dried figs in the bulk foods section of supermarkets.
They were very nice. I should imagine you'd get the same sort of result from drying in a very slow oven, turning them regularly. I think I might even try slicing some of them in half 'across their equator' if I ever try the oven drying method.
Whatever you do to them, please do report back here; I'd love to know what sort of result you get.
