IngridO, do you like rice? I have a recipe for a brown rice salad I often make. It tastes great, is easy to make and an added bonus, it also looks good.
This recipe is fairly similar to the one I make and if you like I can look up my recipe and post it tomorrow. This will give you an idea.

Roasted vege salad with feta or goats cheese.
Roast up a big tray of different veges (tomatoes, courgettes, red onion, capsicum, kumara, pumpkin etc, good for cleaning out the fridge) and let cool then mix with lemon vinaigrette and top with some goats cheese, throw in some nuts or chickpeas for added protein.
Tuna, white bean, red onion and parsley, dressed with lemon juice and olive oil (can add tomatoes, capsicum etc)
Curried egg and chickpea, hard boil egg, chop and mix with a small amount of light mayo mixed with curry powder to taste and a squeeze of lemon juice, mix through chickpeas, coriander, sultanas, peanuts and some small spinach or rocket leaves.

Hello sue, below is the recipe I use for Brown Rice Salad.
1 or 2 cups cooked Brown Rice
Soy Sauce
1 each red and green capsicum, chopped.
1 cup raisins or sultanas
1 cup of roasted peanuts or cashew nuts, with or without salt. (I prefer to roast the peanuts)
1/2 an onion, very finely chopped.
Dressing:
Juice of a lemon, as my lemons are the larger Meyer variety I use half the juice and then adjust to taste.
1 tspn finely chopped garlic
1 tspn sugar
1 Tbspn olive oil
1 Tbspn white vinegar
Cook the brown rice, drain and add a dash of soy sauce, mix it through.
Add the capsicums, raisins and onion and mix. You can add the nuts at this stage, if you wish but I prefer to sprinkle those over the top before serving.
Mix the dressing in a shaker and pour over the salad. The dressing tastes great and it also adds a shine.
Enjoy

Hi IngridO - I'm making this grilled corn salad tonight and it looks yum. From the qtys, it should make a bucketload, and would probably last a few days in the fridge:

Edited to add: I made this last night and wouldn't use their dressing again as the mint was way too much. I would just make a vinaigrette and put coriander and a small amount of mint in the salad itself. I liked the salad though, and the charry flavour from the corn

This salad tastes great as a hot dish but could be served with meat as well. It also tastes good as a cold salad. If we would like the salad to be more filling, we should add some slices of fried sausages or smoked bacon.
Ingredients:
0.5 kg Brussels sprouts

Yum, Flora205, those flavours sound delicious. I do something similar: I very thinly slice the raw brussel sprouts on a mandolin and stir-fry them with chopped up bacon and/or sliced apple, salt & pepper. The brief stir-frying keeps the brussel sprouts slightly crunchy rather than soft, as they would be with boiling.
