Favourite Dressings

Tomorrow we are talking dressings on the Home and Garden show (Radio Live) and while I have compiled a list, I am interested to read what your favourite or go to dressings are?
Typically we tend to do either lemon or balsamic vinaigrette but I also really like miso dressing and tahini based dressings.

Recently I've been regularly making a salad dressing of roughly equal parts of kefir, extra virgin olive oil and cider vinegar with salt and whatever herbs are available in the garden. Tarragon is especially good, so is dill. The kefir forms a suspension with the oil and results in a creamy but light dressing that is delicious with all salad vegetables, particularly bitter greens such as raddichio, rocket, endive, also cucumber and lettuce. The dressing also makes a very good potato salad.

Classic vinaigrette, 1 tablespoon acid (vinegar/lemon/orange), 3 tablespoon oil (olive, rice bran, walnut), teaspoon of mustard (dijon, wholegrain, dry), fresh herbs to taste, a pinch of sugar and a small clove of garlic crushed. Shake together. Salt and pepper on salad first, then dress.
Infinitely variable, to be honest I've never really used the sugar in this dressing, but it's a slight amount considering bought dressings.

While at the Dead Sea in Jordan we had a salad served with a small jug of olive oil and one of lemon juice, and you just poured on what you wanted. I thought it was odd but when I tried it really liked it, and now I often just squeeze a lemon over a salad. Sounds odd but is really fresh and delicious.
