Griz (yes I realise you wrote this a long time ago but I obviously missed it), poachers are usually eggs from young hens as the whites are more likely to stay intact when cooking.
The older the hen gets, the more likely the white is to disperse in the water.
There is so much education needed as unfortunately we can often jump to the wrong conclusions.
