My Grandaughters Pre School is having a Granparents Day with a shared lunch.

Sandwich roll ups (butter and filling of choice on a crustless slice of bread, roll up, and slice into bite size pieces)

Home made chicken bites

Omelette wraps (make omelette quite firm, place fillings on, roll up and slice into bite size pieces).

This is a good recipe for Cheesy Muffins (that I always make for kids shared lunches)

Cheesy Muffins
Makes 12 regular sized muffins
2 cups grated cheese
2 cups self raising flour
1 cup milk
1 teaspoon sugar
1/2 teaspoon salt
1 egg
A pinch of curry powder or cayenne pepper
Turn the oven on to fan 210 degrees C
Mix flour, cheese sugar, salt and curry/cayenne into a bowl
Beat egg and add to the milk
Pour wet mixture into the dry and mix lightly with a fork.
TIP – MIX as little and lightly as possible and what ever you do, don’t beat!
Place into greased muffin trays
Bake for about 12 minutes or until golden
Eat with lots of butter or even JAM!
Delicious!!!

A nice simple banana cake cooked in a ring tin, no icing just a sprinkle of icing sugar. Cut into smallish slices.

Little bacon & egg tarts, use either mini muffin tins or regular muffin tins, line each hole with flakey pastry and pop in a bit of grated cheese, some finely chopped uncooked bacon (about a teaspoon), and a sprinkle of chopped tomato and finely chopped parsley. Whisk an egg or two with milk, salt and pepper, pour into the tins being careful not to overfill. Top with a bit more grated cheese. (Its surprising how many of these you get with a small amount of ingredients). Cook at 200 fan until the pastry is golden and cooked on the bottom. Serve warm or room temperature. These travel well and are excellent picnic fare also.

My children always loved to take the old fashioned cheese, mini pickled onion and pineapple piece on sticks hedgehog, (google images for presentation ideas) You used to be able to get the coloured red and green tiny pickled cocktail onions but I haven't looked for them for ages, probably food colouring is frowned upon nowsmiling smiley I just used to stick the toothpicks into an apple or an orange with the bottom trimmed to keep it flat, this is a great one for the kids to help make themselves.
