Halo,
I am really interested what kind of desserts you prepare in NZ. My kids always look for something new and I try to invent every time something special for them but sometimes I am simply lost without any idea.

My last invention is the Quick and simple dessert with mango:
Ingredients: (for 4 people)
2 mangos
500ml of 30% sweet cream
300g of mascarpone cheese
100g of white chocolate
150g of oat cookies

Do you have steamed puddings Flora? I have many recipes for them but this is my favourite:
Steamed Carrot Pudding
Topping:
1 tbspn butter, melted
¼ cup chopped walnuts
1 tbspn golden syrup
Pudding:
100g butter, melted
2 cups (200g) grated carrot
1 egg
1 cup (approx 160g) brown sugar
1 cup flour
1 tspn baking soda
1 tspn cinnamon
Topping instructions: Combine ingredients in bottom of greased pudding basin.
Melt butter in saucepan. Add grated carrot, egg and brown sugar and mix thoroughly with a fork. Fold in dry ingredients. Steam in a greased 4-5 cup capacity basin, covered with lid, for 2½ hours.

Thank you for the recipe J1. We do not have it in Poland. I will keep it in my "cooking book". We have carrot cake in my country, which may be similar regarding its taste - I will post the recipe for that within few days in "Just cake" topic.

Thank you for the recipe J1. We do not have it in Poland. I will keep it in my "cooking book". We have carrot cake in my country, which may be similar regarding its taste - I will post the recipe for that within few days in "Just cake" topic.

Hi Flora, you say "We do not have it in Poland." Do you mean steamed puddings or do you just mean that particular carrot steamed pudding recipe I gave?
You're right Flora when you say "We have carrot cake in my country, which may be similar regarding its taste". We have carrot cake here too - it's often sold in cafes because so many people like it. Yes, the carrot steamed pudding is a similar flavour.

Today something light, healthy and easy to prepare - Millet groats breakfast
Ingredients (for 2 people):
50g of millet flakes
300ml of coconut milk
3 tablespoons of xylitol
½ teaspoon of vanilla essence
3 apples
½ teaspoon of cinnamon
2 tablespoons of sesame seeds
2 tablespoons of sunflower seeds

Ingredients:

My mum made this dessert back in the 70's for her very trendy dinner parties. I make it still.
1kg Lemon Yoghurt (in the 70's it was passionfruit as they didn't make lemon in those days) gently mixed with roughly 300-400ml whipped loose cream. Just enough cream to make it kind of cheesecaky without losing the bite of the lemon. Add the cream to the yoghurt bit by bit until it's just right.
Add zest of two large or three small lemons (again adding to the mix until your desired tartness achieved) (reserving an amount for garnish).
Layer into small bows with whole gingernuts between layers (large crème brulee type ramekins are best). 3 gingernuts per bowl/ramekin. Start and finish with the yoghurt mix so all gingernuts are surrounded with mix to help them soften.
Top with a little zest to garnish.
Make 24 hours before serving and refrigerate to ensure gingernuts have softened.
A really nice individual tarty cheesecaky dish. Don't serve with anything else.

Our favourite dessert in Auckland NZ is apple crumble or apple and berry crumble.
Its super easy and I never use a recipe.
Basically I mix soft butter, sugar and flour and look in my pantry for other things to add. Sometimes oats, coconut, allspice, nutmeg, vanilla, grated rind off lemons, limes or oranges, chocolate chips, almond meal, even cereals.
Delicious with homemade custard or vanilla ice cream.
A recent favourite with the adults is Kohu Rd chocolate ice cream - rich, dark chocolate and not too sweet - mmmmmmm

Recently, after cooking I had some French pastry left over and a piece of juicy mango. I added walnuts, white chocolate, a few sesame seeds and made some simple snacks.

I do have this recipe that I created using balsamic berries on top of a baked pancake - it could be a dessert or equally a brunch idea. Really delicious - pic attached
Baked pancakes with balsamic berries
Prep time
10 mins
Cook time
30 mins
Total time
40 mins
Serves: 2
What you need
Batter
2 eggs
½ cup milk
½ cup flour
pinch salt
1 Tbs butter
Balsamic berries
1 punnet, strawberries, quartered
1 punnet blueberries
2 Tbs balsamic vinegar
1- 2 Tbs white sugar
How to make
Pancake
Preheat oven to 180C.
Lightly whisk eggs and milk together.
Add sifted flour and salt and whisk to combine and remove the lumps. (Do not over mix as your pancakes will be rubbery – if in doubt under whisk! and leave the lumps)
In a 24cm oven proof dish, cast iron frypan or cake tin, add butter and place dish in the oven to let the butter melt and bubble. A few minutes is fine.
Add batter to dish and cook pancake for 20 – 30 minutes until the sides start to puff up and the pancake looks golden.
Topping
In a bowl add strawberries and blueberries, sugar and balsamic vinegar. Mix to coat. Leave to infuse for at least 10 minutes.
Assembly
Pile berries in the middle of the pancake, and serve with runny cream, creme fraiche or greek yoghurt.

The urchins asked for this today, we call it Plum Yum Yum, but we made it with feijoas instead, as the tree has been very generous.
8-10 plums, halved and pitted or we used 12 feijoas, cut in half and one good scoop out of each half (the urchins ate the rest of the feijoa)
115gm butter softened
1 cup (200 grams) sugar plus extra for topping (see below)
2 eggs
1 teaspoon (5mls)vanilla essence
1 cup (125 grams) all-purpose flour
1 teaspoon (5 grams) baking powder
1 teaspoon cinnamon powder (or ginger for the feijoa)
1 to 1&1/2 Tablespoon Sugar (depending on sweetness of plums / feijoas) for the top.
1 teaspoon cinnamon (extra)
Pre heat oven to 180°C.
Cream butter and 1 cup sugar together until light and fluffy.
Add the eggs, one at a time and scraping down the bowl,
Add in the dry ingredients including the spice, mixing until just combined.
Spoon batter into an 20-23 cm springform tin and smooth the top with the back of the spoon.
Arrange the plums, skin side up, all over the batter, covering it, or if using feijoas, put the largest part of the scoop side down. T(hey look like little temples all over the batter)
Mix the extra cinnamon,(ginger) with the remaining sugar, and sprinkle all over the top.
Bake until cake is golden, about 40 - 45 minutes until a skewer comes out clean.
Cool on rack.
This pie/torte/cake tastes much better the next day, so I make 2. One to enjoy straight away, and one to enjoy the next night (and it uses up about 20 plums / feijoas in the process)

Raspberry Hedgehogs. This is the dessert which I prepare rather often and maybe even more often than the others (as Ruth is saying - urchins ask for it ) Fresh and sun-smelling raspberries arranged on a sweet chocolate mousse looked like colourful hedgehogs. I don't know if this dish will remind everyone of hedgehogs, but the dessert will for sure be tasty for everybody.
Ingredients (for 5 people)

"Dessert for tropical heat"
Today I would like to share with you a recipe for fruit mousse with a hint of coconut. You should serve it strongly chilled. It is perfectly refreshing and supplements the micro-elements which we lose when it is hot. The sweetness of the dessert hinges on the degree of ripeness of the fruit. If you don't have perfectly ripe, juicy fruit, you may add a bit of honey or maple syrup.

Today I would like to share with you a recipe for fruit mousse with a hint of coconut. You should serve it strongly chilled. It is perfectly refreshing and supplements the micro-elements which we lose when it is hot. The sweetness of the dessert hinges on the degree of ripeness of the fruit. If you don't have perfectly ripe, juicy fruit, you may add a bit of honey or maple syrup.

Rhubarb muffins with crumble topping and lemon icing
My children love muffins. This year to give them joy on Children's Day I prepared fluffy, moist muffins with rhubarb, a crunchy crumble topping and lemon icing. They were excellent and everybody, not only the children, liked them.
Ingredients (12 muffins)
dough
250g of flour
1 teaspoon of baking powder
half a teaspoon of baking soda
150g of brown sugar
1 teaspoon of vanilla essence
250ml of milk
60ml of oil
1 egg
a pinch of salt
crumble topping
40g of butter
80g of flour
40g of caster sugar
other ingredients:
3 long sticks of rhubarb
2 tablespoons of brown sugar
icing
6 tablespoons of caster sugar
juice from one lemon

At last it is the strawberry season. Now the fruit not only looks beautiful but is tasty and smells like nothing else in the world. Again we will eat porridge with strawberries, noodles with strawberry mousse for dinner, strawberry cocktails for afternoon tea, and salad with strawberries for supper. Every year I go at the strawberry season with gusto, and after a few weeks I will be fed up and won't be able to look at this yummy, fragrant fruit.
For a good start, I recommend an excellent and healthy strawberry dessert with chia seeds. It is great after Sunday dinner, for afternoon tea, or, if you prepare them earlier, for an energetic, filling and yummy breakfast.
Ingredients (for 4 people)
300g of strawberries
300ml of milk (it may be coconut milk or whatever you prefer)
honey or maple syrup
4 tablespoons of chia seeds
fruit and peppermint leaves for decoration

They liked the dessert with rhubarb, strawberries, coconut crumble topping but without flour and sugar especially if I served it with their favourite ice cream. I think I will make it more often because as well as its excellent flavour it has a couple of other assets: you don't need any sophisticated ingredients, you may prepare it easily and fast, and you may use any seasonal fruit.

What should a Sunday dessert be like if it is to disappear as soon as it has been served? In my home we need two things: chocolate and fruit. These ingredients usually ensure my culinary success. Recently I used them to prepare muffins with blueberries and white chocolate. They were yummy, fluffy inside and crunchy outside, and it was possible to smell the sweet, chocolate fragrance in the corridor outside our flat. As usual, some of them were packed in boxes for my children's packed lunch.

Today I would like to share with you the recipe for a dessert which is neither light nor lacking in sweetness. Instead it is simple, yummy, beautiful and very chocolaty.
I prepared two versions: the first one with desiccated coconut and blueberries and the second with dark chocolate and strawberries. Choose your favourite dessert or go crazy and make your own version.
Bright dessert

Cheesecake muffins for my son
Today, after an especially brave meeting with a nurse, I prepared some cheesecake muffins for my son. I used silicon pastry cases. The muffins look beautiful and the fresh strawberries and peppermint leaves make them even more special, so every gourmand will be delighted with them. I will tell you in secret that it is difficult to eat only one cheesecake.
Ingredients (6 muffins)
1 lemon jelly
10 big strawberries
200g of vanilla fromage frais
grated skin from half a lemon
