Pizza Sauce

Slurp of olive oil, fry garlic and rosemary (or whatever harder herb you like) until the garlic turns golden, add two tins of tomatoes and reduce until thick. Add softer herbs once cooked. I like a really simple pizza, just sauce and mozzarella with some basil and maybe some crispy pancetta/prosciutto.

I do lots of garlic, onion, tinned tomatoes and herbs. However what I have also done is an Eggplant sauce. Roast the eggplant, cool and mash. Add mayonnaise and garlic, until this is a creamy sauce - and use that as a Pizza base. You don't have to confine your pizza's to just tomato based sauces

Yes oregano works well. Or your could try pizza bianca, just slosh some olive oil and chopped garlic onto your base, top with thinly sliced potato, some rosemary/thyme and some mozzarella, and some parmesan grated over the top. Using this idea a thin layer of cheese sauce or bechamel could be good there too.

I'm not keen on eggplant (sorry Irene!) or much cheese (very light on the cheese...., and I don't use mozzarella because, although I know it adds texture and, ah, stretch, it's hopeless flavour-wise). Just need to get a really good tasting tomato base and then add on my favourite vegetable sort of things....mushrooms, capsicum.....a little grating of cheese...

I must admit I've given up making pizza sauce and just smear tomato paste on instead. I also squeeze garlic directly on and sprinkle on fresh oregano. You do need to love tomato as it's pretty strong, although I scrape it on rather than piling it on, which also keeps the pizza from being too wet (hate a wet pizza!). I've also used basil-based pesto. Like you J1 although I'm normally a massive cheese fan I'm not big on cheese on pizzas - I used to sprinkle on parmesan but didn't find it made much difference to the flavour so I just leave it off. Totally agree about mozzarella too - I used to think the lack of flavour was because I wasn't buying the right stuff but it seems that's just how mozzarella is so I give that a swerve as well.

Hi, yes, Carolyn, I did the tomato paste thing too although I did find it a bit strong so ended up adding a little bit of sugar to it. Then I started making pizza sauce instead but am thinking now what I probably need is the pizza sauce with a couple of extra tablespoons of tomato paste added to it before use on each pizza (plus I need to make the original pizza sauce with better herbs in it). And I'm so glad to hear of someone else who doesn't like too much cheese on their pizza!!
