While in Vietnam I thoroughly enjoyed the Vietnamese pancakes that were available at various meals but perhaps most often at breakfast.
I stuffed mine full of herbs, salad leaves, peanuts, crisp shallots, a few prawns and a good dousing of dressing.
Such a healthy breakfast and one I would like to be organised enough to have here.
I have made them a few times for dinner since being back and while Ed and I love them the coconut flavour is something the kids are still getting used to.
They are so simple to make.
Here is a brief blog with recipe for anyone interested.
It will be replaced by a better photo once Liz and I get a chance to get some photos done.

That sounds lovely thanks Helen. They're now on my list of things to make in the next three months. I'll make them for lunch initially.

I made these today. The flavour is delicious but, even though I regularly have coconut milk/cream in dinner recipes without any problem, I got a sense of too much richness for me. I did have quite a bit of trouble getting a balance between thinness, crispiness, ability to turn it over and to get it out of the pan, and was also surprised at how long it actually took to cook each side. I thought my initial problems might be because I was using a nonstick pan so I switched to a scanpan but that quickly proved a step in the wrong direction and back to the nonstick I went. In the end, I made my pancakes a bit thicker and smaller than my original intent and then they worked better and were easier to handle.

I found it important to stir the mixture well prior to getting each scoop out as the heavier content migrated to the bottom of the bowl all the time.

It made 10 pancakes (1/3rd cup of mixture each).

I was a bit puzzled by just what I was supposed to be getting in the way of end result so afterwards I looked at some youtube videos for Banh Xeo. This helped me to understand the process better. Some seem to cook it more like an omelette and were thicker and less crispy than what I'd initially sought to achieve. They also put the fillings in the pan with the mixture. I watched one street food vendor make them in a wok - these ones were very thin and swirled around the pan over and over.

I am seriously going to give these ago, they sound right up my street with a savoury and spicy filling.

Thanks for the trial run J1, Im sure like with regular pancakes, the first one is always the worst. Im imagining them to be light and crispy almost crepe like and adding the filling like you do with an omelette.

They are making my mouth water!!!

We are in Hoi An at the moment and attended a cooking school yesterday. We made Banh Xeo and the recipe we used did not have coconut cream/milk in it. Perhaps the recipes vary by region. They were delicious, nice and crispy around the edges and I will definitely make them at home.

Yes J1 we just used water. The recipe we used was rice flour, water, salt and turmeric. I can take a photo of the recipe and PM it to you if you would like it. Thank you for the link. Bev

Thanks for the offer Bev but don't worry. I'm unlikely to make them again as there are other things I prefer to eat more.
