Best Pork Sausages?

Ok what brand and where do I buy the best pork sausage ?
Im not fussed on the health aspect, its a sausage but the taste.
Also any tips cooking them to perfection. I sometimes pan fry, sometimes bake in the oven, sometimes BBQ, often burn them and they split!!!
Also what do you serve yours with - tomato sauce? chutney? Mustard?

I roast mine in my Airfryer at about 140 deg C which is about 160 deg C in a normal oven. They never split. The secret is a relatively low roasting temperature and to not pierce them.
I've got some sausage casings in my fridge, ready for me to try my hand at making my own sausages. I found my perfect filling recipe by blitzing up some trimmed hangi pork in my food processor with garlic powder. I was initially going to used my hand mincer because I thought the food processor would make a tough mince, but it came out beautifully coarse and tender and the proteins had broken down just enough to keep it bound together without making it rubbery.
