alternatives to Kit Kat bars in Christmas ice cream

Hello all - I have an easy Christmas icecream recipe from several years ago, that uses a can of condensed milk & a pottle of cream whipped together (please note that I will need to check ingredients & measurements as I cannot remember offhand ... so be warned if you risk making it on these loose guidelines, lol).
I have previously added a few Kit Kat bars chopped up into this as well as about 1/4 cup of Kahlua or similar added, so the dessert doesnt freeze solid & ends up as a nice, very sweet addition to Christmas Day desserts.
But - the partner of one of my sons is gluten intolerant & I am wondering if there is another candy type bar that any of you think could be added but wont cause problems for my friend. All I can think of is Moro etc, maybe Flake bars but will check labels for this first of course too.

A Skor bar? It's a Hershey's product, gluten free, and is a crisp butter toffee covered in chocolate. A similar consistency to bAlmond Rica. It survives well being crumbled into ice cream and gives a good crunch. It is a US candy bar, but is widely available in dairies in Auckland (not sure where you live) and I'm pretty sure I've seen it at Countdown.

What about those tubular wafers in round tins. They're called Monetta in New World and Corinthians in Countdown, but they're both made by the same company. They come in flavours such as mint, caramel, cappuchino, hazelnut, coookies & cream, twisted together, barber pole fashion, with chocolate wafer. Most of those flavours would go well with a Bailey's type cream to stop the ice cream hardening too much.

I live in HB, not Akld but will certainly have a hunt about some of the bigger supermarkets in Hastings/Napier - I sometimes think too new &/or different products are more available closer to Christmas, particularly sweets & other confections. Cheers,

@Jenna - Skor bars would be brilliant, I think they're one of my favourite chocolate bars.
@Lorna - those wafers are a good idea but I don't think they're gluten free?
How about Bounty bars, Aeros and Crunchy bars? Or bits of Turkish delight or halva? You can get different flavours of these last two so that might make it a bit different.
