I did a search on line for Annabelle White kumara and bacon dip or spread but came up with nothing. I even searched the Kaipara Kumara recipe bank to no avail. So I thought I would go American and try sweet potato and bacon dip or spread and came up with this recipe that might suit you:

When Parkvale stopped selling their pickled mushrooms my DD was so incensed she sent them a letter of complaint, she must have been all of 10 or so! Have you got a nice recipe for pickled mushrooms, she's coming home at New Year with the man of the moment (seems they're serious....eeeek!).

Haha, Carolyn. Nothing lite here! I used normal cream cheese and Greek yoghurt. I generally don’t have cream cheese or sour cream in the house, but instead buy Greek yoghurt (the non thickened variety). I drain it in muslin over a sieve to make labneh and have some yoghurt, then use either the labneh or the Greek yoghurt in place of them. Really easy and I haven’t had a failure. I started doing it after an extended trip to the Middle East as I just love the food, and use labneh a lot. Hmmmmm! Guess that’s low fat. Oops!
Gris I started making these as an imitation of the Parkvale ones, then just stopped doing them, as you do. I used to pick through the mushrooms to get all the tiny ones (they shrink when they’re pickled), but the other day there were no tiny ones, so I got them as small as I could, then, after being unsure, I cut them all in half. Have fun and I hope they live up to the memories!
1kg tiny mushrooms
3/4 cup sugar
1 teas sesame oil
4 tab soy sauce
2 cups of spiced vinegar
I hadnt premade any spiced vinegar, but heated up everything except the mushrooms with white wine vinegar and a teas of pickling spice. I left the spices in when I poured the liquid over the mushrooms. I was in two minds about this as I thought it would be a stronger flavour but also be not as pretty and maybe annoying to have the seedy bits. I did notice that most of the “bits” got left behind in the pot though. I suggest you boil up the vinegar and spices for 15 minutes, cool and strain, then add to the other ingredients. I just had too many balls in the air.
