MMMMM I love creme patisserie. Yep google it there are heaps.
Its stunning in choux pastry & fruit tarts.
You can replace the caster sugar with Soft Brown Sugar for a caramel flavour and colour too

I wish I could do the accent thing TPANDAV.

On my phone and tablet, both Apple, if I hold down a letter that can sometimes have an accent, a little menu pops up which offers various accented versions of that letter. It’s very handy when writing about food.

But what I was pointing out really was that it is PatissIERE, not PatissERIE. It’s a common mistake and I noticed the other day that even Maggie Beer got it wrong on The Great Australian Bake-off.

Here is how you do the accent on a Mac, there will be similar for PC users.

OPTION+`, the letter à, è, ì, ò, ù,
OPTION+e, the letter á, é, í, ó, ú, ý
OPTION+i, the letter â, ê, î, ô, û
OPTION+n, the letter ã, ñ, õ
OPTION+u, the letter ä, ë, ï, ö, ü, ÿ,

You know I originally typed patissiere, then spell checked it, and changed it!!!!! Doh. Fess up time, I used my mandolin without a guard on Saturday, with the inevitable results (stitches, dressing, time off work, hefty drugs). Probably not paying as much attention as usual.
