Green bean salad

Looking for some different flavours to use with green beans in a salad - the combination of very hot weather and a huge crop of beans has meant I am running out of ideas. We have had a sweet sour salad with kidney beans and the salad on foodlvers that includes vermicelli and lime juice, both lovely, just would like to try something else.

Here's a recipe I posted some years ago for an Arabic recipe for green beans. Can be eaten warm or cold.

Glad you enjoyed it, jj. Coincidentally, I found this recipe in the NZ Herald the other day and have copied it to my recipe book but haven't yet tried it. I eat a lot of salmon and thought this sounded really nice. I will be buying the beans, peas and ricotta in my groceries later this week.

Blanched Green Beans, whole if small round, sliced if large flat
Sliced red onion
Halved cherry tomatoes or quartered larger tomatoes
Vinaigrette - Your choice of flavour - bought or homemade I often use Newm's Own Classic if I'm feeling lazy
Crumbled feta over the top
Salt and Pepper
Toss the beans, onions and tomatoes with the vinaigrette, season then pile the feta on top and add some chopped parsley if you like.
Another variation on this is:

Blanched Beans,
Chopped green onions (spring)
Chopped tomatoes or whole cherry
Chopped flat leaf parsley
Lemon infused Olive Oil
Salt/Pepper
Toss the beans and onions with lemon infused olive oil, season then top with tomato and parsley and drizzle with a nice flavoured vinegar, White Wine, Raspberry, Sherry or balsamic are all good here.

I generally don't prefer sprouts or green bean in my salad. But after reading your recipe and positive comments on your thread I have decided to give it a try. Thanks for sharing the recipe!

I have been using this recipe a lot and it has become a favourite. It can be made with fresh or frozen beans, either works well. . I add finely chopped red onion to the oil/garlic mix and just before serving I add pine nuts or slivered almonds.
Reading Danube's post anything you like would go well.
