I do the same with frozen whole tomatoes and find I have to boil the sauce longer to get the desired thickness because freezing makes the tomatoes go more watery than when they are fresh. I also make spaghetti and tomato soup and bottle it or freeze. It's great to be able to freeze fresh tomatoes and deal with them out of the flush of the season.
