Freezing tomatoes for sauce?

I’m running out of time to make tomato sauce and wondered about freezing pre measured tomatoes, to cook up later. Will it work? Thanks, Janet

We pick our tomatoes off the vines in our veg garden and put them straight in the freezer as they are (after washing them). I then make tomato sauce from them when I'm ready to. It seems to work fine. We've been doing it that way for at least five years.

Perfect! I was just a bit concerned about the water content. Thanks, Janet

I do the same with frozen whole tomatoes and find I have to boil the sauce longer to get the desired thickness because freezing makes the tomatoes go more watery than when they are fresh. I also make spaghetti and tomato soup and bottle it or freeze. It's great to be able to freeze fresh tomatoes and deal with them out of the flush of the season.

Dawn.

Yes, not specifically because frozen tomatoes are more watery but, as part of my method of making a nice thick tomato sauce I concentrate the tomatoes down first, from 8kg of tomatoes to 3kg (and then later on I remove the skin and seeds as well).
