What is 'Larb'? March 22, 2018 08:39PM |

In the 'Bite' section of today's NZ Herald there is a recipe for Chicken & Mushroom Larb on Noodles by Angela Casley and I am puzzled by the use of the word 'larb'. I have posted a comment on the page, as follows:
"I have searched the Oxford, McMillan and Dictionary.com dictionaries find the meaning of the word 'Larb' with the response in every case: "nothing found". I have also submitted the word to Google Translate asking it to "detect language" with no result. What does this word mean and which language is it from? I can only assume it is a foreign word that someone has spelt as they have heard it spoken, and the spelling in incorrect. It could possibly be the Arabic word 'Lhab', meaning flame, but where is the 'flame' in this recipe?"

Does anyone here know what larb means or where it comes from?

Thank you, TPANDAV, my suspicions about it being a foreign word spelt the way it sounds was correct. I just couldn't find the right language using Google translate. I am going to be making Angela Casley's version tonight, but will be using pork mince instead of chicken mince. I don't trust commercially produced chicken mince - I think it's far too prone to causing sickness. I'm always cautious when it comes to purchasing processed chicken meat and having to process the mince myself would be just a step too far. I've got bettter things to do than dismember, deskin, debone and mince chicken, and then have to clean up the mess produced!

Lorna, if you use a search engine such as Google, just type the mystery word into the search bar and the search engine will do the rest. There is no need to fathom out which language is involved.
Here's the recipe for the larb that I make most often. It is very simple and has converted more than one person to the delights of kimchi.
Kimchi Pork Larb
serves 2 - 3
450g minced free range pork
1 tab raw rice
1 & 1/2 c kimchi, at room temperature, roughly chopped
1/2 c coriander leaves, chopped
fish sauce
rice vinegar
Korean chilli flakes
Cook pork in large frying pan over medium heat until the fat starts to run and the meat browns and crisps, about 10 minutes.
Meanwhile toast rice until lightly browned, grind to a coarse powder.
Transfer pork to a large bowl, add kimchi, rice and coriander. Season with fish sauce, vinegar and chillis. Serve with rice and/or lettuce leaves.

That recipe sounds nice Lorna and I have added it to my list of things to try.
Re chicken mince - while I hear your concerns, I have bought it often, mainly for burgers, and never had a problem. I believe that there is no more risk than buying chicken, breasts, thighs, drums etc. although for some reason I would never buy a whole fresh chicken, only frozen. I guess we've all got our little 'quirks'.
Thanks again for the recipe recommendation.

Barbara Anne
