Hi,
Heading up to friend's in the Hawkes Bay this Saturday, I've said I'll take something for our dinner (hosts don't really cook). I've just realised that tomorrow the supermarkets won't be open (I'm on nights tonight so can't get to a supermarket tonight either), so whatever I take will have to be purchased on the way and prepped/cooked at their place. So what would you take?

Griz, it really does depend on how much trouble you want to go to and what time you will be arriving. You say that the hosts don't cook so I imagine that anything you bring will be appreciated, notwithstanding their particular likes and dislikes. As they are friends they will understand your busy schedule and irregular working hours.
So it could be something as simple as a hot cooked chicken, bought coleslaw and fresh buns, with ice cream in a cone for dessert.
If you have a little more time, you could do a curry (lamb, chicken, beef) using one of the Patak's jar sauces (which are not too bad IMHO). I often add broccoli, carrots, capsicum etc. Accompany with rice - the Tilda rice pouches are great - and most supermarkets have naan bread in their frozen section.
If you plan to arrive early/mid Saturday afternoon then you have more scope to shop and cook something of your own choosing.

Oh, Griz...what a predicament.
If it was me (after the panic had subsided) I'd be head down in my freezer and combing the pantry. It depends on whether you want a sizable dinner or would be happy just having something enjoyable and good company.
If you have potatoes, onions, frozen peas and plenty of eggs and cheese type of ingredients you could take and make a frittata. Or maybe a large fried rice/risotto dish.
A lot of service stations will be open but I am not sure how well stocked they are. There may also be roadside stalls selling fresh fruit and vegetables, especially in Hawkes Bay.

Marnie, all shops are open as usual on Saturday, it's just variable on Good Friday and Easter Sunday which are statutory holidays.
Edited to correct the above - shops are generally closed on Good Friday and Easter Sunday - with ever-increasing exceptions - and you can't buy alcohol. However the statutory holidays are Good Friday and Easter Monday (not Sunday).

Thanks, Barbara Anne, I had forgotten Griz mentioned it was Saturday she was travelling. I agree with you about the KISS principle. Good friends would or should appreciate your busy lifestyle, Griz.
Once we were staying in Sydney, my brother and sister in law were driving in to have lunch with us. I headed for the market and came back with fresh salad ingredients, freshly baked rolls, a cooked chicken (as mentioned by Barbara Anne), some fresh fruit and some butter and I also had on hand a bottle of their favourite wine. That worked perfectly.

When staying with friends recently I decided to contribute to dinner one of the nights we stayed and bought some Venison burger patties from the supermarket, some burger buns and salad. Our host BBQ'ed the patties and we all made our own burgers, you can take a pack of bacon and some big flat mushrooms for a bit of a gourmet burger. Hopefully they would have the basics like mayo and mustard etc. It was a very easy meal and enjoyed by everyone even the kids.

The Chicken Noodle Salad on foodlovers is my go to easy dish to take to people.
It can be made with shredded cooked roast chicken if you like.

You could buy the chicken, cook the noodles at their place, make dressing either at home or at their place and then just toss it all together. Obviously the vegetables need a bit of chopping but it is super easy.

That is just perfect Helen, it feels like I've made a bit more effort, AND I have everything except the edamame,chicken and noodles here so I can chop veges, take a bunch of the herbs, and make the dressing at home before we go, then look like a superstar when I get there! LOL.
I think I'll do a berry Eton mess kind of thing for dessert.

Do you own a thermal cooker? Could use that, or I've just seen something online where a person cooked a casserole type dish in a big cast iron casserole on the stovetop for 30 minutes then wrapped in towels to finish cooking - same principle. I know I've done baby potatoes and other veggies in oven bags and put in amongst the casserole in my thermal cooker, (before I started the stovetop heating process) and they are always the perfect consistency.
