Does anyone have the recipe for Helen's Morning Glory Muffins? It's in her cookbook which I own but don't have with me and it differs from the one on this website.
I can totally recommend them - I used to make them to have with coffee when guests were staying and they would demolish the whole batch!

Hello Lynette,
I am probably a bit late with this and I do hope Helen doesn't mind me posting this here, I would have PM'd you but the PM/Captcha isn't working yet.

1 cup sugar...220g
1 tspn baking soda
2 tspn cinnamon
1/4 tspn salt
2 cups grated carrot
1/2 cup sultanas
1 cup grated green apple, skin on
1 tspn vanilla extract
2 eggs
3/4 cup oil...185 ml
1/2 cup sunflower seeds...35g
Preheat the oven to 180C. Grease a 12 cup muffin tin.
Mix together flour, sugar, baking soda, cinnamon and salt. Stir in carrot, sultanas,, apple and vanilla extract.
Whisk eggs and oil together and then gently fold into dry ingredients.
Spoon baking mixture into greased muffin tin and sprinkle with sunflower seeds. Bake for 20 minutes until golden and springy to touch.
