Smorgastarta (Swedish Sandwich Cake)

I made a Swedish Sandwich Cake for a Mother's Day lunch this year. These were apparently a big thing in the seventies in Sweden but have recently made a comeback. It was my first time giving it a try and it was a lot of fun to do. You bake bread in a cake tin, slice it into layers and fill it, then cover it with an "icing" (mine was a mix of cream cheese and sour cream). The more I read about them the more concerned I was about how it would turn out, as there were a lot of descriptions of them being way too rich or with too many flavours, so I was pleasantly surprised when it turned out to be delicious.
I used a bread dough that had some wholemeal flour in it as you need the bread to be sturdy enough to hold up the fillings. (You can use a bought loaf, but I make all my bread anyway so this was no trouble.) I also read a tip online that when choosing fillings you should include something crunchy on each layer to stop the whole thing becoming too mooshy. That turned out to be great advice. My fillings were smoked salmon mousse (just smoked salmon blended with crème fraiche and a bit of lemon juice) and cucumber on one layer and egg salad with celery and with minimal mayonnaise on the other. Some people really go to town with the decorations, which you can see if you google "smorgastarta", but I kept mine relatively simple. I've attached some photos if you want to see how it looked. Would I make one again? Probably not, but I was really glad I'd done this one.

Wow, your sandwich cake looks extremely attractive and my mouth is watering! What a lovely thing to do for your Mother's Day lunch. I know I would enjoy every mouthful if someone made one for me for a special occasion.
