Score the skin side in narrow strips, rub plenty of salt into both sides and refrigerate uncovered overnight to dry out. Brush any excess salt off (do not rinse, it mustn't get wet), place skin up on a rack over a tray in a 200 degree C oven, cook for about 15 minutes or until it is well puffed. You will need to watch it carefully as crackling can suddenly burn.

I like use pork crackling to make pork scratchings to snack on.
I cut off as much fat as I can from the fat side, then cut it into small strips with some good kitchen scissors, then toss the strips with some salt, pepper and whatever other spices or herbs that appeal and then cook them in the air fryer until crunchy.
