Marshmallows

I am wondering if there is an alternative to melting marshmallows to add to other ingredients in recipes. It seems to me an expensive way of doing things. TIA

Oh that sounds strange to me as I've never melted marshmallows, nor added them to a recipe! smiling smiley What sort of recipe would have melted marshmallows in it? I used to have a fantastic recipe for marshmallow slice which had a biscuit base, then a lovely thick layer of marshmallow, then choc icing for the top. I don't have the recipe anymore as I don't make anything like that anymore but I imagine you could use that sort of recipe for marshmallow instead of bought marshmallows. Something like this [www.chelsea.co.nz] or this [www.recipecommunity.com.au] - I remember my base had desiccated coconut in it.....

Part of the recipe for a Christmas candy cane pie. It looks good with the crushed candy cane in the mix and sprinkled on top.

24 large marshmallows
1/2 cup whole milk
1 teaspoon vanilla extract
1/8 teaspoon salt
6 drops peppermint extract
6 drops red food coloring
In a heavy saucepan, combine marshmallows and milk over low heat. Cook and stir until marshmallows are melted and mixture is smooth. Remove from heat.
Stir in vanilla, salt, peppermint extract and food coloring. Cool 30 minutes, stirring several times.

My girls had cookbooks that had recipes that asked for the same thing with marshmallows.
