I've been making dairy free versions of lots of foods because I have a family member currently unable to have dairy. Most things convert really well. But I was especially surprised at how well the Edmond's Dominion Pudding, a long lasting favourite for children in our house, converts to dairy free, I substituted the butter for coconut oil and the milk for coconut milk and you couldn't tell the difference in flavour, texture or look AT ALL. You would never have known it was different from the standard recipe. We always make it with 2 generous tablespoons of golden syrup in the bottom of the pudding basin which is why everyone likes it so much. Here's the dairy free version:
Dairy Free Dominion Pudding
50g coconut oil
½ cup (100g) sugar
1 egg
1 cup plain flour
1½ teaspoons baking powder
¼ cup coconut milk
2 generous tablespoons golden syrup
Melt coconut oil, stir sugar in well. Beat in egg. Sift flour and baking powder together. Add to creamed mixture alternately with coconut milk. Place golden syrup in bottom of a well-greased two-cup-capacity pudding basin. Spoon mixture over. Cover with lid. Steam for 1¼ hours or until pudding feels firm when lightly touched. Unmould onto a serving plate. Serve with milk or custard and serve to the dairy-free person with dairy-free milk alternatives.
