Hi there,
Many of you will know I work at a Hospice, and we have had a lot of limes donated by a lovely fairy.
I would love a few recipes so I can use these beauties.
Especially keen to get a lime sorbet recipe that could be used as an option for patients who are on a clear fluid diet.
But slices, cake, tarts..........

Lime Posset is a delicious and very easy dessert. Servings should be small as it is rich and intense.
Lime Posset
Makes 4 small glasses.
500ml double cream
150g caster sugar
finely grated zest of 2 - 3 limes
75ml lime juice
Put the cream, caster sugar and zest in a saucepan and bring to the boil, stirring occasionally to dissolve the sugar. Reduce the heat so that the mixture doesn't boil over, and let it bubble enthusiastically for about 3 minutes, stirring regularly.
Remove from the heat, stir in the lime juice and immediately pass through a fine sieve. Pour into four small wine glasses or cups and leave to cool. Refrigerate for a couple of hours before serving. Will keep in the fridge for at least five days.
You can leave the zest in if you prefer, but I prefer the texture after straining it out.

A lime jelly would be nice. I'll give you my recipe for orange jelly, which could easily be adapted by either adding a little more sugar or reducing the quantity of juice. Taste and adjust.
Orange Jelly
300 ml fresh orange juice (about 4 oranges)
juice of 1/2 lemon
100 ml sugar syrup
100 ml water
5 leaves of gelatine
Choose mould and check volume. Cut gelatine into a few pieces and place in at least 600 ml capacity heatproof bowl. Add 2 tab juice mixture to barely cover. Leave to soften 10 min. Meanwhile heat a small pan of water.
Place bowl of gelatine over simmering water and stir occasionally until completely melted, about 10 min. Add rest of mixture and combine well. Pour through sieve into a jug then carefully fill mould. Refrigerate until set, about 6 hours.

Lemon or Lime & Ginger cordial
2 cups water
1.5 cups sugar
A “thumb” of root ginger - finely sliced
Peel of 1 lemon or lime
2 teaspoons cream of tartar
1 cup of lemon or lime juice
Dissolve the sugar in the water, together with the ginger, peel and cream of tartar.
Bring to the boil & simmer 5 minutes
Add the juice and bring back to the boil.
When cool, strain and bottle.
I make bottles of this, put it into empty gin bottles (the blue ones - which people save for me). A label and string around the neck. Nice gift.
