Marinated Fish

Hi There
Does any one have a tried and true recipe for marinated fish. We are off fishing this weekend again and I would like to know a tried and true way of marinating fresh snapper. We have several different ways of cooking and smoking this but having tried just recently marinated fish I would like to give it a go myself. I know that you use lemons but am unable to find a recipe in the books that I have.

Hello Helen,
Marinating fish is more a method than an actual recipe. Lime juice is better than lemon juice and limes (tho' expensive) are in the shops now.
Marinate the fish in lime juice for 2 or 3 hours, drain most of juice away and add a dollop of thick coconut cream, Maldon salt, a splash of sweet chilli sauce, taste and add what you think it might benefit from - a squeeze of garlic, more chilli, some palm sugar, perhaps. Fresh out of the sea it should taste wonderful.

Helen I have just checked and yes there is a ceviche recipe there. I would use it as a base and add or delete ingredients that you do not care to use e.g the mango, orange, prawns etc...
