Leftover Corned Beef

Amazed that you actually have any left over!
Love corned beef hash - make it by boiling or steaming potatoes, mashing them, or dicing them, adding finely chopped raw onion, and the broken up meat. And lots of chopped parsley. Salt and pepper but be careful of salt if corned beef is a bit salty. You can add garlic or chilli or whatever at this stage.
If mixture too stiff, add an egg.
Flour hands and mould into patties, or cook in frying pan with a little cooking oil until brown on both sides.
So simple and so yummy and so cheap.
Try a bit to see if you like it.

I always wonder what to do with that quarter or so that is left over after a couple of meals. Now I slice it up and make up little meal parcels and freeze it. Most successful and great for those times that you have forgotten to take something out for dinner as you rush out the door for work and drag yourself in tired at night.

Dear Morven, We make some white sauce with parcley out of a packet and warm it up again in our small oven - sometimes we also put a little cheese and slices of tomato on top if available. Very tasty. It does make scrumptious rissoles too, but a bit much if you just want a quick tea. I know what you mean though, if it is a large chunk of meat and you have already had two meals with it, you do need a change!

With my left over corn beef I fry up the left over potatoes (or cook somemore if needed) & Vegies with onion. Add the left over corned beef that has been diced up salt and pepper may be a spalsh of worcestershire sauce or mustard (anything you might like). I sometimes just have it like that or add a couple of beaten eggs to it (alittle like a frittarta) and cook unit the eggas are cooked. It is lovely & also easy

Julie Le Clerc has a recipe in one of her books for Corned Beef and Kumara Cottage Pie.
Fry an onion, add a can of crushed tomatoes, lots of parsley and ground pepper. Whizz corned beef in food processor and add to tomato mixture and thicken with a couple of tbsp of flour. Put into an oven proof dish and top with mashed kumara (lots of butter and cream/milk).
The salty corned beef and creamy kumara go really well together and it is definitely worth trying.

Fry an onion in a little butter and add frozen peas. Place sliced corned beef on topand dot with a little more butter and salt and pepper. Simmer for about ten minutes till the beef is heated through. Serve with mashed potatoes. Yum
Used to do this often when the kids were younger. Always a favourite and different from the usual hot or cold. Shepherds pie with corned beef is very tasty as well

This is a yummy recipe using corned beef
Golden Glazed Corned Beef
Sliced cooked corned beef
1/2 cup water
2 Tbspns vinegar
1 tsp made mustard
1 large cooking apple
1 desspn butter
225gm tin pineapple pieces
1 desspn cornflour
1 Tbspn brown sugar
pinch salt
1 onion
Slice corned beef as required and lay in an ovenproof dish. Peel apple and slice, scatter over the meat. Drain pineapple, catching juice in a small saucepan and spread the pineapple over the apple. To the juice add vinegar, brown sugar, made mustard, and salt. Mix cornflour with water and stir until smooth and boiling. Pour over the meat and fruit in dish. Cut onion in thin rounds and arrange over the dish with a small dab of butter on each. Bake in a moderate oven about 1 hour.
