Do you mean there is a black sooty buildup? If so, your hob needs to be adjusted as the flame isn't set right - it should burn blue, if it the flame is yellow you can get that sooty stuff.
I use mostly stainless steel, have a couple of cast iron, and have one anodised aluminium non stick pan. All work fine, never get any marks on the bottom. You can use anything on gas.

Oh! In that case you're probably just cooking on too high of a heat. Have you tried cooking on a lower flame? If low is still too high you can either get the gas fitter back to adjust low to lower, or get a simmer mat (google it). One of my elements is still too high on low and i turn the knob almost all the way to off until there is just a flicker of a flame.
