Istanbul for me. I've only spent one week there and long to go back. Find a hotel or apartment that has a terrace overlooking the Bosphorus (Beyoglu, across the river from Sultanahmet, will have views of the Blue Mosque) and even if you are too tired to go out you can sit and watch the outstanding view.
Sweet Home Istanbul has interesting apartments in Beyoglu. I'm not sure if any are available for one night only but it would be worth a look. We stayed in "Cihangir Terrace ", which was wonderful and a short walk from Taksim Square.

The risks are certainly a consideration, but for me they would be outweighed by the advantages of Istanbul compared with the other possible cities. Istanbul is less expensive, the airport is not too far out of town, the streets are endlessly fascinating, there's the ferry trip on the Bosphorus, Hagia Sophia, Cisterna Basilica .

From a financial perspective I would not pick London - their airport/country taxes are the highest in Europe. It is okay as a city to depart from, but not as a city to fly into.
And whilst I have no qualms about Turkey - the NZ Government do have travel warnings in place regarding travel to Turkey In which case I would check if you are covered by your Travel Insurance provider if travelling to a country with warnings in place?

Oh thanks yes good points to consider.
Irene as we are only booking flights and not accommodation I haven't enlisted your help as know it is more work than return.
After talking it through tonight we may overnight half way and spend a night in Singapore and then go straight through to Greece the next day although I do love Istanbul.....

Why stop for just one night? Make it 2 or 3 nights and get to see a bit of the city you choose; do some of the 'touristy' things. Make it worthwhile stopping. To me, seems a pity to travel so far and see nothing but the inside of a hotel room and maybe a restaurant. When I went to England I had a 2 day stopover in Singapore on the way out and 3 days in Dubai on the way back. I'm not sorry.

no problems Helen. I tend to agree with Lorna and my preference would be to have a stopover at your half way transit point (Asia, USA, Vancouver) on the way - and depending on which city, I would do it coming home just in case there is any shopping involved. A lot depends upon your carrier of course. If you're flying Singapore Airlines they have special stopover rates for Singapore

While a couple of days stop over sounds great, we only want to be away 2 weeks (can't leave kids for too long) and want to maximise our time in Greece. The Singapore stopover with Singapore airlines is actually looking quite good - 30 hours.
