Here's a nice Allyson Gofton recipe for citrus lentils:

I've never used tinned lentils, though. They're so quick to prepare from scratch, I can't see the point in spending so much on the tinned variety when you can have the dry stuff ready and waiting to use in your storecupboard.
Incidentally, if you add (or serve them with) a grain such as rice, or chickpeas they will make a complete protein thereby making meat unnecessary for that meal.

I find tinned lentils great to use for adding to any mince sauce to extend it, or just making a "vegetarian mince" sauce for spag bol or cottage pie.
When first introducing lentils to my fussy fiancee this is what I did and he didn't even notice the lack of meat until I told him. Now he loves all legumes and we only eat meat about 2x per week.
I find tins of bean so great to have on hand in the cupboard. When its 6pm and you've got no idea whats for dinner, just chuck a tin of beans in a pan with a few flavours and your well on your way to dinner.
If your using dried beans you have to plan your dinner 24 hours ahead in order to soak/cook them. And lets face it, while we'll be that organized maybe once a week, the rest of the time, we need something speedy!

Lentils don't need soaking and cook quickly - about 20 minutes. Other beans do need to be soaked but there is a quick way. Put them in a pot with water to cover plus a little bit more. Put them on the element and heat till just starting to simmer then turn off and stand till they swell up. This only takes about an hour. I usually cook mine in the pressure cooker which only takes about 10 minutes and when I cook them I always cook a pot full and freeze the extra. Cooking your own is so much cheaper than buying them and their is a much greater range available. Try Binn Inn or an Indian shop.
