After lots of "what are you cooking for dinner tonight" I started thinking about those nights when a dessert is required.
I generally cook a chocolate tart (recipe on foodlovers). I use really good quality 75% pure chocolate in the tart and serve it with vanilla icecream and generally a coulis made with frozen raspberries.
In winter I like to do gingerbread with caramelised pineapple, icecream and caramel sauce.
what are your favourites?

Banana Chocolate winter Pudding with chocolate caramel sauce it is cooked in a cake tin.
I make up half the recipe and cook it in muffin tins I can't remember where i got the recipes but it is a great favourite with my family. My son took the leftovers home with him one night and a friend of his who is a chef was there and wanted the recipe, he now includes this on his winter menu.
For a quick dessert, when unexpected guests arrive, I usually have a Swiss jam roll in the freezer and make a custard to go with it and serve with cream .

Our office had a pot-luck dinner at the bosses place last night and as I had drawn the short straw to work the late afternoon shift, I took my crockpot to work and filled the office with the aroma of a dried fruit compote cooking. It had raisins, cranberries, mango, figs, prunes, peaches, apricots and apples and I used about 750ml of apple and mango juice with a 1/4 cup of brandy as the liquid. I added a stick of cinnamon, 6 whole cloves and a star anise and cooked it on low all afternoon. As the boss lives just round the corner from the office, I went there straight from work. By the time we were ready to eat the warm dessert, the sauce was syrupy thick and the fruit was deliciously plump with rich concentrated flavours. Everyone served themselves straight from the crockpot and I took along whipped cream and ice cream.
You know how it is when eating communally, no one wants to take the last bit off the plate, so I was lucky enough to bring home just enough fruit to have for breakfast this morning, mixed with some brown rice (I always have rice ready cooked in the freezer).
I love my crockpots.

My husband & I never bother too much by ourselves but when the family or just the grandchildren come we don't need an excuse. Well of course one can't go past the old crumble topping one & I am loving the Anzac pudding from the Taste magazine, Lemon Delicious & in the summer the rolled pavlova & choc log are our favourites.
I always have a jar of lemon curd & frozen pastry shells so always something for any unexpected guests. If I don't have lemon curd, well drained crushed pineapple with some whipped cream folded in is also nice in the pastry shells sometime with a touch of chopped glace ginger added too.

Crusty apple tart, straight out of the oven and served with vanilla ice-cream. I like to cook the granny smith first with lemon peel no sugar added to fruit, a good home made short crust pastry - on the lid of pastry I'd sprinkle cinnamon, nutmeg and little castor sugar. I can see it now and I think I'll make some tomorrow for father's day - its his favourite too. =)

Lemon Delicious is a good stand by for the family, when I want to fill hungry tummies a bit more. Individual sticky date puds with caramel sauce are a fav for visitors or for going out. Or I opt for a special dessert cake with coulis or cream or other sauces.....maybe apple and ginger, or lemon syrup cake.

Ooooh I forgot the Lemon Yogurt Cake in the recipe section served hot with lemon curd and whipped cream. Instead of plain yogurt I used lemon delight yogurt.
Son just arrived with a request for this recipe as his MIL is coming for dinner tomorrow and DIL wants to impress.
Oh Oh just had the first few lemons taken off my tree by son .

Pears poached in red or white wine,bread and butter pud made with fruit bread or croissants, or creme caramel.Stewed tamarillos with custard.Apple or lemon anything.Chocolate self saucing pudding.
In summer my favourite is fresh stone fruit baked with wine,sugar and a cinnamon stick,fresh fruit salads and homemade ice cream.No wonder I go to weight watchers.

Chocolate steam pudding with thickened cream, (lots of thickened Cream) No wonder i am developing love handles and a spare tire.
Made a simple sessert last week (which also won't be helping!) with chocolate instant pudding in Parfeit glasses, layered with chopped strawberries which have been rolled in icing sugar, thickened cream Layer upon layer alternating choc pudding, thickened cream, strawberies and topped with a wee drizzle of chocolate sauce a generous amount of of grated chocolate and a strawberry.
There is a great chocolate pudding recipe here in the recipes section.

Not a dessert but in the latest Taste mag is a choc cake recipe from a cafe, it's a requested one & today I have made it for tomorrow. It looks & smells wonderful I can't wait to get into it. It is a very large one so great for a family of 9 adults & 5 kids that are coming over. Will keep you posted on the taste.

Our special occassion dessert (having tonight for Fathers day) is a baked New York cheese cake , made with some Ricotta so has a slight tartness to it,, and Raspberries on top - juice thickened with a little cornflour so its a "clear" fruit top with a couple of crumbled Flake Bars on top.. Gorgeous zing of Rapsberries.

The chocolate cake was divine. Split really well but I wouldn't go with the filling too much as it was going to be very sweet so I whipped up cream folded in some of the filling from the recipe & put that in on top of the jam. I also had some vanilla oil & I used that where it stated oil & it was very moist, I just sieved icing sugar over the top. Will definetely do it again & it is a big one.

If you find you are out of tart cases, gingernut biscuits work well. Lay a biscuit on top of each patty pan, put into a warm oven and when they start to get warm, gently press into tins so that they take up the shape. Remove from oven, as they cool down they stay in their shapes. Fill with pineapple and whipped cream, or whatever you fancy.

I am wondering about the Taste recipe that was tried by LynV and lesley was going to bake also.
I saw the recipe in 'Taste' mag also (almost the same as the Celebration Cake from Helen except it has some sour cream added and twice the amount of BP and Soda)
LynV - did you put the full amount of BP and Soda when you made the cake and if so, did it not taste of Soda? and Lesley what did you think opf it?
I thought maybe the cafe had halved the recipe before sending in to the Taste request and forgotten to halve the raising.

Has anyone else (besides LynnV and Lesley ) made the 'Taste' recipe for the requested choc cake - Pukeko Junction cafe ), I am concerned about the huge amount of BP and Soda in recipe.
I would like to try it as it has sour cream but otherwise identical to Helen's Celebration cake so should be extra nice with additional sour cream - but the raising quantities seem wrong.

I thought there was a misprint meaning that the 1 tbsp of soda and BP should have been 1 tsp but went along with it, it turned out ok, the icing was far too sweet even for my sweet tooth family, I actually prefer the recipe from Feb/March 2007 Foodtown mag for Decadent Chocolate cake to this one, but I like to try new recipes and have a good test panel here at home

HeatherH - have you checked out the forum on Taste's website as someone may have commented on the recipe? I have never been on their forum but have just noticed it when checking the site for recipes. Perhaps there may even be an option to question the editor ? It does seem like a lot of baking soda though !
