I am hosting a work 'do' at my place soon and want to get as much done in advance as I can. How long would hummus keep for in the fridge? I've never actually made it before but I have all the ingredients ready to go!

Hi Tracey, it freezes really well, it goes a bit fizzy after a week or so and is at it's premium deliciousness after a day (if you use garlic)....in my humble opinion, I reckon if you drizzle olive oil over the surface it keeps it from exposure to air and then you just stir it in a little on serving (good olive oil that is)

Yum....Hummus.....:p I just brought some more from the Beach Deli, I really should make my own, I just have no time.
