In one of her books Alison Holst explains how to prepare creamed corn which is a particularly useful recipe if the corn gets too big and mature and past eating it on the cob. She used the creamed corn for sandwich fillings, toasted corn rolls, soup or savoury fillings. Once cooked it can be refrigerated or frozen. If the corn pulp is frozen before cooking the flavour will deteriorate with long storage.
