Did anyone see a segment on John Campbell's programme last night featuring home made gifts for Christmas?
One of the gifts being made was Forgotten Cakes.
Someone gave me that recipe years ago and I had almost forgotten (no pun intended) about it. Incredibly simple to make and very delicious, more than a meringue.
Here is my recipe:
2 egg whites (room temp)
pinch of salt
2/3 cup caster sugar
1/2 cup rice bubbles
vanilla essence
1/2 cup chocolate chips or chopped chocolate
Heat oven to 180C. Beat egg whites amd salt until fairly stiff, gradually add sugar, beating until stiff and glossy. Fold in rice bubbles and chocolate and add vanilla. Cover a baking tray with aluminium foil. Drop teaspoons of mixture onto tray. Turn off oven and place tray in it, leave undisturbed for 3 hours or overnight. Store in airtight tins.
They used almonds instead of rice bubbles. I didn't notice, but they were possibly toasted and/or slivered or chopped.

That looks very yummy and so easy! I am always looking for recipes that I can use for my gluten intolerant grandchild and I know he will love this one! I think I'll use his cocoa flavoured rice bubbles as well as the chocolate chips - nothing like a Chocolate Overdose at Christmas. I missed Campbell Live last night so a big Thanks for the recipe Marnie.
