The Ginger Kisses turn out just like Ernest Adams Ginger Kisses. I personally don't like the filling recipe offered though and improvise my own.
Nellie's Ginger Biscuits (Nellie posted this recipe on the foodlovers forum in 2007 - many people enjoy this recipe):
Nellie’s Ginger Biscuits
5oz butter (141g)
8oz sugar (227g)
8oz flour (225g)
1 tspn baking powder
1/2 tspn baking soda
1 egg
1 tbspn golden syrup
3 tspns ground ginger
1/2 tspn cinnamon
Cream butter and sugar, add egg, and golden syrup and mix well. Add flour, baking powder, baking soda, ginger and cinnamon. Roll into balls. DO NOT FLATTEN. Bake 15 - 20 mins at 350°F (180°C).
This recipe for Melting Moments, posted on the foodlover forum in 2009 by ColleenD. She makes them in the food processor. I use passionfruit icing as the filling.
Melting Moments
225g butter
1 1/4 cups (156g) cornflour
1/2 cup (65g) icing sugar
1/2 tspn salt
1 cup flour (140g)
Process all ingredients together. Roll into walnut-sized balls, place on tray and flatten each slightly with a fork. Bake at 160°C for 20 minutes. When cool, sandwich pairs together with butter icing.
Anzac Slice
250g flour
200g butter
300g sugar
2 tbspns golden syrup
1 cup coconut
1 tspn baking soda
2 cups rolled oats
4 tbspns boiling water
1 cup sultanas
Mix together flour, sugar, coconut, rolled oats and sultanas. Melt butter and golden syrup. Dissolve baking soda in boiling water, add butter and golden syrup. Mix everything together and place in a slice dish and press. Bake at 180°C for 15-20 minutes, or until golden. Slice while warm.
