i have been looking around for maraschino cherries with stems in order to make chocolates covered cherries, i have been looking in supermarkets and none of them seems to have any with stems selling...
Does any of you know where i can get them?
Also, im trying to follow this recipe [candy.about.com] but i am having trouble finding one of the ingredients...Invertase..what is this?

Try Gilmours [www.gilmours.co.nz] They have Masterfoods Maraschino cherries with stem 2.2kg listed.
Otherwise Davis Trading Co might be worth a try (they have them listed) [www.davis.co.nz]
Oh, re invertase [kiwicakes.co.nz]

Ahh, ok, invertase is the enzyme that helps sugar to "invert".
I believe that maybe "isomalt" might be something that would work, Martin Bosley lists suppliers in the back of latest book I think (I would look but it is in a box prior to moving house in a few weeks).

As always Joe Pastry is my go to on technical bakeriestuff...
