Here's my peach jam recipe Doff - I haven't made it for years because we don't eat a lot of jam, but using Golden Queens it is very nice. Sorry I can't tell you an easy way to get the stone out. I cut off slices by following close to the contour of the stone with my knife in downward stroks starting from the top of the peach.

PEACH JAM
3 lb peaches
1 cup water
Cook until peaches are soft. At this point you can use a potato masher to mash the slices if you wish.
Add 2 1/4 lbs sugar and stir until sugar is melted.
Add juice of 1/2 a lemon.
Boil stirring often and keep an eye on it to stop it from catching.
Test for setting.
Bottle.
