I was lucky enough to be gifted a beautiful fillet of smoked kingfish and as some of you know LOVE LOVE LOVE chowder.
I decided to try making a less creamy and healthier one with the very moist and tasty fish.
Heres what I did...
Gently sauteed in olive oil onions and celery that I diced up small.
Added a couple of teaspoons of curry powder and cooked to release the flavour.
Added butter and flour to make a roux.
Added stock (seafood would be better I guess BUT I just used chicken stock cubes)
Simmered to thicken and seasoned.
Added flaked smoked fish.
AND the ingredient with the WOW factor - FRESH DILL!
Amazing, pretty healthy, quick, cheap and so good I ate the lot!
You could add a dash of cream/milk at the end for a creamier style.
