Does anyone had a good spicy LASKA recipe to share?

Please do correct me if I'm wrong, but I think it is called Laksa? smiling smiley I've only tasted it once made by a friend, with shrimps, and I loved it. It had a little bit of warmth to it and it was medium spicy.

Definitely Laksa. I've not got a good recipe though. It's one of those things that I often buy takeaway for a quick lunch.

Ingrid I have a not too hot chicken and lentil laksa recipe which I will have to send you by private message as I can't get the format accepted by this messageboard (I get a Phorum Error).

not sure if this is a true laksa but it is very tasty and pretty quick to make.

Thai coconut & veg broth

1½ tbsp Thai red curry paste - I probably use a tbsp more depends on brand used
1 tsp vegetable oil
1l vegetable stock
* I added 2 very finely shredded kaffier lime leaves, grated fresh ginger*
400ml can half-fat coconut milk- I used coconut milk
2 tsp brown sugar - I used palm sugar
175g medium egg noodles
2 carrots, cut into matchsticks
½ head Chinese leaf, sliced - i used Baby bok choy
½ x 300g bag beansprouts - Omitted
But used 1/2 red pepper finely sliced plus 5 mushrooms finely sliced instead
6 cherry tomatoes, halved - omitted
juice 1 lime
3 spring onions, halved, then finely sliced lengthways
handful coriander, roughly chopped

Place the curry paste in a large saucepan or wok with the oil. Fry for 1 min until fragrant. Tip in the vegetable stock, coconut milk and brown sugar. and kaffier lime leaves and grated ginger.Simmer for 3 mins.
Add the noodles, carrots and veggies Chinese leaf and simmer for 4-6 mins, until all are tender. Mix in beansprouts and tomatoes. Add lime juice to taste and some extra seasoning, if you like. Spoon into bowls and sprinkle with spring onions and coriander.
Adjust seasoning as needed.
