How do you cook a garlic bulb?
Just watched a show where the chef took out a Garlic Bulb (whole cooked garlic) from the fridge and then squeezed the cooked bulb into a soup.
okay....this is new to me...how do you do this? Is it simply roasting a whole garlic bulb while you are doing a normal roast like chicken?
Also noticed that the tops of garlic was cut off...is this done before or after the garlic is cooked or after?

I cut the top off (or not - it just makes it easier to squeeze out the cooked flesh), pull off a piece of tinfoil, put the bulb in scooping up the sides and pour in a tsp or so of olive oil S&P - wrap up and bake at 350 deg C for about 35-40 mins - you can do this while the chook is roasting - but only for the last 35 mins.

I have only done this once. I sliced the top 1/3 approx off, leaving the whole Garlic ie all the cloves together, in its "paper": skin. Lightly drizzle with oil and i dry baked it with my vegetables. The resulting garlic is soft and paste like but very sweet and strong garlic flavour but not bitter. Divine on baked potatoes, and esp with roast beef.

Many thanks for your quick replies.....okay think I have got it?
Snip the tops off and them sprinkle a little oil on before roasting/baking....225 degrees C ???? ..I have about 5 bulbs which I am going to do1st thing tomorrow morning.

We enjoy whole garlic bulbs (complete rosette of garlic) cooked with a roast (which we don't have very often these days) and squeeze out the garlic - yum!! You may have to remove the rosette earlier than the roast - needs checking. I'd eat this every day if I didn't converse with anyone!!! And as Lynley says, you can or don't have to cut the tops off first.

I have cooked whole *elephant garlic* with a roast (but once, and not to be repeated! (scuse the pun)), but the gaseous turnout several hours following digestion wasn't worth going down that path again. He he he.....

Letit, I think Lynley probably meant 350F as 350C for 35 minutes woud give you a lump of charcoal. About 180C for 35 minutes should be good. One other thing - if you keep it in your fridge, keep it in something airtight or everything else in your fridge will be tainted with the garlic smell. Coffee & garlic milk do not go well together, though the butter could be a time saving feature when having baked potatoes or garlic bread.

Okay...have cooked the garlic cloves but have a question....again watching a show another chef said that the green shoot should be discarded as his Gran had said that it would taste bitter.
Have to admit didn't follow the instructions above.....only use a small amount of olive oil....eg only cut the tips of the clove off not in 1/2.
But they do look pretty good...may have cooked a little below 185 degrees F for 40 mins or so.
What about the green tips?....Did them tonight so they still cooling off.

Okay .....Personally I did not find the green tips less flavourasome than the rest of the clove...Maybe my taste...But I will be roasting garlic from now on that is for sure.
I used extra Olive oil instead of the normal......Would I abe ble to use Rice Bran oil instead????

I cannot see any reason why you can't use whatever cooking oil you want to John. As for the green tips on the garlic, I try to avoid garlic which is sprouting (hard to find any that's not starting to in my neckothewoods at the moment) but it's often on it's way to drying out in the centre of the bulb. If I don't have an option when I use garlic in cooking, I do cut off the green parts. I've never tasted the green bits so don't know whether they are bitter or not, but I think when you are roasting garlic only the best plump rosettes would be used. Glad it all went well - you're obviously sold on roasted garlic too!

I use whatever oil I have closest to me when getting the Garlic ready to roast. I have used Grapeseed, Rice Bran and Olive Oil, it's only to keep the Garlic moist while roasting, that's all.
I also cut only the top off the whole bulb.
I am pleased that you enjoyed it this way, I always have some in a jar in the fridge and use it on the side of everything.

I am interested to know How well / long it keep in the fridge once cooked. Do you squeeze it out of the "paper shells" or do you leave it whole and use as needed? I would have thought it was BEST eaten from the oven?
It is gorgeous and creamy and spreadable but didnt think it was a "keeper" as such.

The Chef in the programme had the whole Roast Garlic wrapped in some Glad wrap and it was just sitting on the fridge shelf along with everything else. He just unwrapped it and squeezed the garlic out of its shells into the Humas mixture he was making.

The above site indicates that Mashed Roasted Garlic can be kept in the fridge for up to 4 days or it can also be frozen.

Hmmm! adding 3 or 4 cloves of roasted garlic to a meal is...to put it mildly.....awsome....but then again I guess most of you know this....Wish I had many years ago....it doesn't appear that that the green shoots are bitter when roasted.....well have seen quite a few sites with pictures of the finished product and it looked the same as mine.
Will be roasting a few more in the near future.
