Oil separating out of Bliss Balls. October 19, 2016 11:18PM |

The first time I made bliss balls this happened and I read that one must process the various ingredients separately to avoid it. I've had success (mostly) but yesterday they were extraordinarily oily again. Any ideas? My ingredients: raw cashews, LSA, psyllium, 10 dates, peanut butter, coconut oil. Interestingly the oil which comes out of them is completely flavourless. I've rolled them in coconut and they are fine (delicious) to eat but I would like to understand why it happens.

It seems the coconut oil could be the main problem. Some people leave it out entirely. See:
Ingredients include “20 grams coconut oil, (optional - helps the mixture to set but there may be enough oil in the nuts. Adjust the coconut oil to suit. As you roll the balls you will notice the oil release. Use this is a guide next time if you think they are too oily.”
Also see comments as they mention oil use.

“Mine varies slightly from the standard in that I don't add any coconut oil. I find they stick together just fine with the ingredients I use. The upsides for cutting the coconut oil are that they are less oily at room temperature…. If they are too oily and you dust them with cocoa or cacao powder, the powder quickly soaks up the oil, turns to mush, and pretty much disappears. The downside is it can take a little more work to make them stick together.
Optional: Soak dates in warm water for about 5 minutes, then drain. I find that the balls are much easier to form if you do this.”

Thank you, J1, I like using some coconut oil (anti Alzheimic!?) but may have been too generous with it yesterday. I do soak the dates. And if the processed mixture seems much too dry I add a spoonful or two of boiling water. I will persevere. They are such a satisfying sweet treat with a cup of coffee.
