Crispy potatoes

My current favourite way of doing crisp potatoes baked in the oven:
1. Cook potatoes for approx 25 minutes (first photo).
2. Add a dash of evoo (e.g. 1 tbspn) to them. Put the pan lid on and shake them around so they end up "fluffy". (second photo).
3. Put on oven tray and cook in oven until desired state is reached (e.g. 175°C 45 minutes). (see remaining photos)

I par-boil the potatoes for about 5 minutes and after draining, put them back on the hot, turned off element for a very short time, about 1/2 - 1 minute to dry them, then sprinkle over about 1 tablespoon of semolina and swirl the saucepan around to rough-up and coat the potatoes. They then go into the roasting pan that has been heating in the oven to make sure the oil is really hot, baste with the hot oil and into the oven for 30-40 minutes till golden and crispy.
