Variations of soft-boiled eggs serving

In Poland usually we crash and take away a top of eggshell and eat the egg with a small spoon. This time I served it differently. I wonder how you serve it in New Zealand.

I would like to share with you the recipe for a very simple egg and vegetable brunch. Though my children like all vegetables, the look of the food made them anxious. Only the soft boiled eggs settled them down and got them eating. After a while there were two empty glasses in the dishwasher and my children could go back to playing. It was good, because the holiday is almost over.

Ingredients (for 3 people)
half an onion
2 cloves of garlic
1 tablespoon of butter
300g of courgette
1 red pepper
2 tomatoes
2 sprigs of rosemary
2 sprigs of thyme
3 tablespoons of minced chives
3 eggs

We eat soft boiled eggs the same way - take the top off by cracking around the edges with a small spoon, add salt and pepper then eat the inside with a spoon,. My husband and I often have soft boiled eggs for breakfast and add a little miso butter as we eat.

A while ago we had a Spanish guest and he had never experienced eating eggs this way. He found it quite mysterious, but when he returned to his home he practised and now he eats soft boiled eggs often as they are so easy to make.

Yum, your recipe looks delicious, I'd demolish both of them!

I often take boiled eggs to work - a super easy and healthy snack.

I wanted to bump them up a bit and make more of a meal out of them so started blitzing in the food processor, the boiled eggs with iceberg lettuce and salt/pepper. I would then chop up some tomato and layer it in to soup type container. Its very delicious and could be eaten with bread or crackers.

The only down side is cleaning the food processor confused smiley

@TPANDAV - this miso butter is something new for me - I've checked the recipes on YTube - have to try oncesmiling smiley

@Vanessa - I don't like the food processor's cleaning as wellsmiling smiley. Your dish sounds interesting for me. It is probably good idea for brunch in the office.
