Shortbread Making Started

I love eating and gifting shortbread at Christmas time but so often run out of steam.
So, this year I am starting my shortbread making today.
I will makes logs of mixture, wrap them tightly and freeze and then bake as needed in a months time.
Has anyone else got any Christmas prep tips that they are starting now?

Made today for Xmas day. Falafel. Will thaw and roll into balls Xmas Eve and fry up Xmas Day.
Every year without fail; a niece or granddaughter turns up on the day; looks over the food with disdain and declares they are now vegetarian/vegan and nothing here they can eat. One step ahead this year. Will serve the falafel on a bed of baby spinach leaves and julienne carrots/capsicums/courgettes/snow pea sprouts and a side of tzatziki sauce in case not pretending to be totally vegan.
