Hi
Please can you tell me what sort of containers you use for storing homemade chicken stock. Last time I made it I used some cheap little plastic tubs from payless plastics but was thinking these may not be the best thing if I am defrosting in microwave. I guess if I am more organised I could get it out earlier to defrost. The tupperware square rounds look good to - but can not pop those in microwave either. Would love to hear what others use - Thanks.

I use plain old plastic containers with lids - but I don't use a microwave (at all anymore)- if I am trying to quickly thaw a big block of gorgeousness like home-made chicken stock - I melt the edges in a sink of hot water and tip the block into a stock pot and heat it on the stove...

I do them two ways depending on what I have left in the freezer. To store larger amounts I recycle containers from our chinese takeaway. They're great for freezing everything, berries, stocks, soups, sauces. To store smaller quantities I use large icecube trays and when they are frozen tip them into a plastic ziplock bag. So much easier to just plop a couple of stock ice cubes into a dish or pot (and they melt faster as they're smaller).

I use two methods. For larger amounts I simply pour it in a ziplock bag and freeze it in that. Then to defrost it just rip open the bag and dump the frozen block into a glass bowl and into the microwave. Pams brand bags don't work so well for this as I have had a few leaks, but I have used Multix brand (significantly cheaper than Glad) for several years and have only had a very small number of leaks. For smaller quantities I use ice cube trays or muffin tins (good for about 1C).

I'm in the two-method brigade, too. I use the empty Jimbo cat-food lidded plastic containers or I freeze into ice cubes and when frozen, tip them into an ice-cream container. Being square, they stack well and I use them for all sorts in the freezer: ready-cut cake, frozen fruit, ice cubes of lemon juice, stock, and plain ice cubes in summer for drinks.

We preserve our stock in sealed glass jars. We are boiling it up to reduce it anyway, so we sterilise the jars and tip the stock into them. Seems to work OK.
